Over the past few days, the global specialty coffee community has been fixated on one of the industry's most prestigious events—the World Barista Championship (WBC).

The 2026 WBC took place from October 22 to 25 in Panama, bringing together national champion baristas from across the globe to compete for the ultimate title. Taiwan’s representative, Klay Wen, stood on this stage utilizing a remarkable Geisha coffee from the renowned Finca Deborah in Panama.

But what exactly is evaluated at the World Barista Championship? Is it simply awarded to whoever brews the best-tasting cup?

(Espresso)

(Milk Beverage)

(Signature Beverage)

Understanding WCC vs. WBC

WCC (World Coffee Championships) serves as the umbrella organization for a suite of world-level coffee competitions. It encompasses diverse specialized disciplines, including:

WBC (World Barista Championship), WBrC (World Brewers Cup), WLAC (World Latte Art Championship), WCTC (World Coffee in Good Spirits / Cup Tasters), WCRC (World Coffee Roasting Championship), WCIGS (World Coffee in Good Spirits Championship). Among these, the WBC is centered around espresso and stands as one of the most iconic events in specialty coffee. Competitors must master far more than basic brewing techniques; they are judged on their extraction precision, sensory evaluation, beverage design, and presentation skills—seamlessly articulating their deep understanding of coffee directly to the judges.

15 Minutes, 12 Drinks

The performance window for a WBC routine is strictly 15 minutes. Within this timeframe, the barista must prepare three distinct courses for four sensory judges:

Espresso Course:
The most direct evaluation of the coffee's intrinsic quality. Judges score flavor attributes, acidity, sweetness, mouthfeel, and overall balance, while assessing whether the beverage accurately reflects the sensory descriptors promised by the competitor.

Milk Beverage Course:
Focuses on the synergy between espresso and milk. Competitors demonstrate harmonious flavor balance, sweetness, and tactile qualities through espresso and steamed milk. Beyond microfoam texture or visual latte art, the critical factor is whether the coffee and milk integrate to deliver a cohesive culinary experience.

Signature Beverage Course:
The ultimate platform for personal philosophy and innovation. Built upon an espresso base, competitors incorporate distinct ingredients and culinary techniques to craft a novel flavor experience—all while honoring and preserving the fundamental character of the underlying coffee.

Four drinks per course yield a total of 12 beverages. Throughout the entire service, baristas must deliver a continuous verbal presentation detailing origin terroir, processing methods, flavor profiles, and optimal drinking instructions.

Flavor First: Beyond Speed and Cost

Exceptional sensory quality is the core of the competition. The WBC is neither a speed test nor a contest decided by who sources the most expensive green coffee. Alongside sensory attributes, judges evaluate technical execution, workflow efficiency, station cleanliness, creativity, and the candidate’s ability to orchestrate an immersive coffee experience.

An elite competitor must possess a profound understanding of their coffee, knowing precisely how to optimize extraction to highlight its best qualities, and articulating their flavor design with accuracy. For instance, if a barista describes notes of jasmine, bright citrus acidity, and honey sweetness, judges expect those exact flavor notes to manifest in the cup. This demands extraordinary sensory precision alongside brewing technicalities.

Spotlighting Panama Geisha on the World Stage

The farm chosen by Taiwan's Klay Wen—Finca Deborah—is an acclaimed specialty coffee estate managed by Jamison Savage in Panama, situated at high altitudes between 1,900 and 2,000 meters above sea level. World-renowned for its high-elevation Geisha cultivation and innovative processing techniques, the estate has repeatedly shone on the global competition stage. Notably, Taiwanese barista Berg Wu used a washed Geisha from Finca Deborah to capture the World Barista Championship title in 2016.

For local enthusiasts, Justin Coffee also offers Geisha selections from Finca Deborah. While the exact auction lots may differ from competition batches, experiencing coffees from this estate offers a window into its signature terroir and flavor profile.

Value Beyond the Trophy

Within the global specialty coffee ecosystem, the WBC is far more than a stage for individual baristas; it operates as an essential catalyst for industry innovation. Breakthroughs across agronomy, post-harvest processing, roasting profiles, extraction science, and sensory communication gain international visibility through the tournament. Over time, these competition-driven innovations trickled down into daily cafe operations, directly elevating the nuance, transparency, and quality of the coffee we enjoy every day.

While there is only one World Champion each year, the dedication to pursuing a better cup of coffee resides in every brew.
