Coffee Flavor 

The flavors of coffee are derived from the breakdown of various nutrients in the green coffee beans during roasting. Heat causes these compounds to degrade into a variety of aromatic molecular structures, resulting in a wide spectrum of flavors. High-quality coffee beans naturally possess a rich aroma that evolves at different temperatures—high, medium, and low—offering a delightful and nuanced experience worth savoring.

Coffee originates from Ethiopia in Africa. Suitable regions for coffee cultivation worldwide are located between 25 degrees north and south latitude, including areas near the equator. Coffee-growing regions require an annual rainfall of 1,500-2,000 millimeters to align with the coffee tree’s flowering cycle. Additionally, fertile soil, ample sunlight, and appropriate altitude are essential. The conditions for cultivating high-quality coffee are quite stringent, encompassing factors such as sunlight, rainfall, soil quality, temperature, as well as the methods of harvesting and processing the coffee beans—all of which significantly impact coffee quality.

The coffee tree, botanically classified under the Rubiaceae family and the Coffea subgenus, is an evergreen tree. Coffee beans are the seeds of the coffee fruit. There are three main varieties: Arabica, Robusta, and Liberica. These three varieties cannot crossbreed to produce different subspecies. The world’s specialty coffee comes from the Arabica variety, and within Arabica, there are various subspecies resulting from evolution, hybridization, and mutation.

From a botanical perspective, coffee plants are evergreen trees belonging to the Rubiaceae family, Coffea genus. Coffee beans are the seeds of the coffee cherry. There are three primary species of coffee: Arabica (Coffea arabica), Robusta (Coffea canephora), and Liberica (Coffea liberica). These three species cannot interbreed to produce new subspecies.

All specialty coffee in the world comes from Arabica, which has undergone various evolutions, hybridizations, and mutations, resulting in numerous Arabica subspecies. Arabica remains the foundation of premium coffee globally.

 Coffee Processes refer to the methods of transforming ripe red cherries into dried green beans. Each processing method has its own advantages and disadvantages, influenced by the natural environment and varying demands of the origin. Therefore, each region has its suitable processing techniques, summarized as follows:
 

 

Natural/Sundried/Dry Processed: Also known as the dry process, this method involves drying the coffee cherries directly under the sun. The fruit's skin and pulp remain on the bean during drying, imparting sweetness, body, and unique flavors.

Washed/Wet Processed: After removing the fruit and pulp, the beans are fermented in water to remove the mucilage. This process results in a clean cup with bright acidity, a hallmark of specialty coffee.

Honey/Pulped Natural/Semi-dry Processed: A combination of the natural and washed processes, honey processing involves removing the fruit but leaving some of the mucilage on the bean before drying. The mucilage, or honey layer, contributes significant sugars and acids, resulting in a flavor profile between the natural and washed methods.
