Coffee Flavor
The flavors of coffee are derived from the breakdown of various nutrients in the green coffee beans during roasting. Heat causes these compounds to degrade into a variety of aromatic molecular structures, resulting in a wide spectrum of flavors. High-quality coffee beans naturally possess a rich aroma that evolves at different temperatures—high, medium, and low—offering a delightful and nuanced experience worth savoring.
Coffee originated in Ethiopia, Africa. Globally, the optimal growing regions for coffee beans lie between the 25th parallels north and south, encompassing the equator. Coffee-growing regions require annual rainfall between 1500-2000 millimeters, coinciding with the coffee tree's flowering cycle. Additionally, fertile soil, ample sunlight, and suitable altitude are essential. Cultivating high-quality coffee demands stringent conditions, including sunlight, rainfall, soil, temperature, harvesting methods, and processing.
Justin Coffee meticulously selects beans from renowned origins, committed to crafting exceptional single-origin coffees. Our portfolio includes ten distinct estates from nine countries: Panama, El Salvador, Costa Rica, Guatemala, Honduras, Ethiopia, Kenya, New Guinea, and Indonesia (Sumatra).
Coffee trees belong to the genus Coffea, family Rubiaceae, and are evergreen shrubs. Coffee beans are the seeds of coffee cherries and are primarily categorized into three main species: Arabica, Robusta, and Liberica. The world's specialty coffees almost exclusively originate from the Arabica species, which encompasses a vast array of subspecies due to evolution, hybridization, and mutation.
Justin Coffee proudly prints the bean variety on each package, allowing you to explore the diverse flavor profiles of different coffee beans. While many factors influence a cup's taste, knowing the specific bean variety offers a glimpse into the vast world of coffee. We meticulously select various Arabica subspecies, including Geisha, Pacamara, Heirloom, Bourbon, Typica, Caturra, Pacas, SL28, SL34, Tim Tim, and Catuai, to craft our exceptional specialty coffees.
(Coffee Processes)
Coffee processes refer to the methods of converting ripe red fruits into dried green beans. Each processing method has its own advantages and disadvantages, influenced by the natural environment and varying demands of each origin. Therefore, each region has its suitable processing method. An overview is as follows:
Natural/Sundried/Dry Processed: Also known as the dry process, this method involves drying the coffee cherries directly under the sun. The fruit's skin and pulp remain on the bean during drying, imparting sweetness, body, and unique flavors.
Washed/Wet Processed: After removing the fruit and pulp, the beans are fermented in water to remove the mucilage. This process results in a clean cup with bright acidity, a hallmark of specialty coffee.
Honey/Pulped Natural/Semi-dry Processed: A combination of the natural and washed processes, honey processing involves removing the fruit but leaving some of the mucilage on the bean before drying. The mucilage, or honey layer, contributes significant sugars and acids, resulting in a flavor profile between the natural and washed methods.
