什麼是日曬法?

日曬法Natural / Sundried / Dry Processed

又稱自然乾燥法、非水洗式處理法,是加工處理法中最傳統且常見的方法,處理過程中不會用到水。起源於衣索比亞,將採集下來的咖啡果實放在陽光下曬乾後去殼,其中的種子仍然在裡面,在長時間的曝曬過程中吸收了果皮、果肉及果膠的味道,而讓咖啡的甜度、醇厚度更飽滿,易製造出特有香氣。
The Natural Process, also known as Sundried or Dry Processed, is one of the oldest and most traditional coffee processing methods. Originating in Ethiopia, this method does not use water during processing. The whole coffee cherries are dried under the sun before being hulled to extract the green beans. Throughout the long drying process, the beans absorb flavors from the cherry’s skin, pulp, and mucilage, enhancing their sweetness, body, and aroma.

咖啡生產者將所有果實放在陽光下的乾燥床上,這些床由露台組成或由架高的乾燥台組成。在3-6週的過程中,咖啡會發酵,生產者將翻轉它們以均勻乾燥並防止變質。在此期間,果實中的糖份和附著在種子上的果膠會產生風味並使它們更甜。咖啡乾燥後,用機器將乾燥的果肉和果皮與種子分離。日曬處理法的咖啡多汁、糖漿狀,非常值得付出如此的努力。
Producers spread the cherries on drying beds or terraces under the sun. These drying beds are made of terraces or high drying tables. Over 3 to 6 weeks, coffee will ferment. Producers turn them regularly to ensure even drying and prevent spoilage. During this time, the sugars and mucilage contribute to a distinct fruity and syrupy flavor. Once fully dried, the cherries are mechanically hulled to separate the beans from the dried fruit layers. Natural processed coffee is known for its rich, juicy texture and syrupy sweetness, making the additional effort worthwhile.
