去果皮日曬(Pulped Natural)
是巴西處理生豆的一種方式,用去果皮機將外層的果皮及部分果膠層去除,再放置太陽下乾燥,類似蜜處理(Honey Process)中的黃蜜處理,蜜的意思來自於很黏的果膠層,黏的感覺如蜜一般。果膠層保留了高比例的糖分及酸質,在適當發酵控制下,增加風味與甜度。
The Pulped Natural process is a coffee processing method commonly used in Brazil. This method involves: Removing the outer skin and part of the mucilage layer using a pulping machine. Drying the beans under the sun, allowing the remaining mucilage to ferment naturally. This process is similar to the Honey Process, specifically the Yellow Honey Process, where the sticky mucilage layer remains on the beans, giving them a honey-like texture. The mucilage layer retains a high amount of sugars and acidity, and when properly fermented, it enhances both flavor and sweetness.

創立超過半個世紀的巴西(Brasil)伊帕內瑪莊園(Ipanema)推出19目大顆粒蜜處理咖啡,讓帶果膠層的生豆,經3天的日曬後,以乾燥機進行45小時乾燥,並將目數達19目的咖啡生豆獨立挑選出來,產量非常稀少,約佔總產量的2%,帶有杏仁及核桃的香氣、酸質柔順、甜感飽滿厚實。
One notable example is the Ipanema Estate in Brazil, which has been in operation for over 50 years. They introduced a 19-screen-size Pulped Natural coffee, where the beans are sun-dried for three days, machine-dried for 45 hours, sorted to ensure only large 19-screen-size beans are selected. This coffee is extremely rare, making up only 2% of their total production, and is known for its almond and walnut aroma, smooth acidity, and full-bodied sweetness.
