ROR (Rate of Rise) refers to the rate of temperature increase per minute during coffee roasting. Internationally, a 30-second interval is commonly used for measurement. In the graph, the lower curve represents the ROR curve, while the upper curve represents the bean temperature curve. This particular graph was described by the renowned coffee roasting expert Scott Rao as depicting one of the most unforgettable coffee batches he has ever tasted.
