The flavors of coffee are derived from the breakdown of various nutrients in the green coffee beans during roasting. Heat causes these compounds to degrade into a variety of aromatic molecular structures, resulting in a wide spectrum of flavors. High-quality coffee beans naturally possess a rich aroma that evolves at different temperatures—high, medium, and low—offering a delightful and nuanced experience worth savoring.

Indonesia is a vast archipelagic country composed of numerous volcanic islands, naturally endowed with an excellent coffee-growing environment and favorable latitude. Each island has its own unique characteristics due to differences in terrain and climate. The main coffee-growing islands in Indonesia include Sumatra, Sulawesi, Java, Sumbawa, Flores, and Papua. Among them, Sumatra is the most significant coffee-producing region, famous for its renowned Mandheling coffee.
Currently, the best coffee beans in Indonesia primarily come from P.W.N. (Pwani Coffee Company). P.W.N.'s beans are mostly specialty-grade, with Mandheling coffee originating from native coffee trees in Indonesia’s mountainous regions. These beans undergo rigorous cupping and selection processes. P.W.N. Mandheling is known for its bold flavor, lingering sweetness, and natural fruity aroma, making it a distinctive choice among Indonesian coffees.
Mandheling seems to have become synonymous with specialty coffee from Indonesia. However, Mandheling is not the name of a region, a place, or a variety. It originates from a mispronunciation of the Mandailing ethnic group in Sumatra. During the Japanese occupation of Indonesia in World War II, a Japanese soldier encountered exceptionally aromatic coffee in a café. Curious about the coffee's name, he inadvertently asked where the owner was from. Misunderstanding, the owner replied: "Man 'té'ning." After the war, Japanese soldiers arranged for traders to import this coffee to Japan. With great popularity, Mandheling coffee was thus created.
The Tim Tim variety, also known as Timor, is a natural hybrid of Arabica and Robusta. It was discovered in Timor, Indonesia, in the 1940s and is highly resistant to leaf rust, cold-tolerant, and high-yielding. The trees are robust, with strong trunks and drooping branches that allow nutrients to be effectively distributed. Its flavor profile is rich and full-bodied, with low acidity.
This batch is Triple-Picked (TP), meaning it has undergone three rounds of meticulous hand selection. The G1 (Grade 1) designation indicates the highest quality grade for this coffee variety.
(Coffee Processes)
The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region.
This batch has undergone Indonesia's unique Semi-Washed processing method, also known as Wet-Hulled, which is characteristic of Sumatra. Due to the region’s humid climate, the parchment coffee undergoes an initial washing and fermentation process, followed by one to two days of sun drying. At this stage, the moisture content of the beans remains around 30%–50%, but the parchment is removed early before continuing the drying process. This accelerates the overall drying time of the green beans. After approximately two more days of drying, the moisture content is reduced to 12%–13%, making the beans ready for further processing.
This unique Wet-Hulled method is widely used in Indonesia to adapt to its tropical climate and contributes to the distinct flavors of Sumatran coffee.
