The Coffee Flavor Wheel
The Coffee Flavor Wheel, the result of a joint study by the Specialty Coffee Association of America (SCAA) and World Coffee Research, is a tool designed for coffee cuppers.
When we drink coffee, we can try to taste various flavors at different stages. When the coffee is just ground, when it is brewed, and when it is sipped into the mouth, different flavors will appear.
The description of flavor
The description of flavor is a combination of smell and taste because most flavors are actually a mixture of smell and taste. For example, lemon flavor has a unique acid, sweet, and bitter taste.
When looking at the flavor wheel, we can start from the center and then look out. The basic flavor is in the center, and subdivides outwards into other, more nuanced textures or flavors.
For example, while cupping Ethiopian coffee, you might taste fruity flavors, extending the fruity flavor block outwards, more descriptive directions will appear, reminiscent of berries, dried fruits, citrus fruits, etc. If you think it is a citrus fruit during the cup test, you can subdivide the description, whether it is “pomelo flavor,” “tangerine flavor,” “lemon flavor” or “lime flavor.” Make sure you identify which flavor, you can go back to the center point and continue to describe the flavor in the other directions, repeating the steps until you feel that you are done describing the flavors of the coffee. This is how the flavor wheel is basically used.
