The flavors of coffee are derived from the breakdown of various nutrients in the green coffee beans during roasting. Heat causes these compounds to degrade into a variety of aromatic molecular structures, resulting in a wide spectrum of flavors. High-quality coffee beans naturally possess a rich aroma that evolves at different temperatures—high, medium, and low—offering a delightful and nuanced experience worth savoring.

Coffee originates from Ethiopia, Africa. The ideal coffee-growing regions worldwide are located between 25 degrees north and south latitude, including equatorial areas. These regions require an annual rainfall of 1,500–2,000 mm, aligned with the flowering cycle of coffee trees.
Additionally, factors such as fertile soil, ample sunlight, and optimal altitude are essential for successful coffee cultivation. The conditions for growing high-quality coffee are highly demanding, including sunlight, rainfall, soil quality, temperature, harvesting methods, and processing techniques, all of which significantly impact coffee quality.
Justin Coffee carefully selects beans from the world's top coffee-growing regions and is committed to crafting premium Italian estate blend coffee using high-quality single estate beans. This blend includes coffee from Guatemala, Ethiopia, and New Guinea, ensuring a rich and authentic espresso experience.
We are committed to using 100% Arabica beans (Arabica – known for its elegant flavor and classified as specialty coffee) to craft our Italian Estate Blend.
We never use Robusta beans (Robusta – known for its harsh flavor and containing more than twice the caffeine of Arabica, not classified as specialty coffee).
(Coffee Processes)
The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. This batch uses the following three processing methods, described below:
【Washed / Wet Processed】
After removing the coffee cherry’s skin and pulp, the beans are soaked in fermentation tanks to break down and remove the mucilage remaining on the parchment. They are then thoroughly washed with water, resulting in a clean, bright acidity, one of the key characteristics of specialty coffee.
【Natural / Sundried / Dry Processed】
Also known as the Natural Drying Method or Non-Washed Process, this method involves drying freshly harvested coffee cherries under the sun before removing the outer layers. During the long exposure to sunlight, the beans absorb flavors from the fruit and pulp, leading to enhanced sweetness, a fuller body, and a distinctive aroma.
