How Emotions Influence Taste Perception

When we drink coffee, the signals detected by the tongue and nose are processed by the brain’s limbic system and prefrontal cortex—areas also responsible for emotions, memory, and reward.

When we’re in a good mood: Dopamine levels rise, and the brain tends to amplify positive signals. The same floral and fruity notes may taste brighter and sweeter.

When we’re stressed or low: Cortisol (the stress hormone) increases, dulling our sensitivity to sweetness and aroma, while bitterness and astringency become more pronounced.

When we’re relaxed: The parasympathetic nervous system takes the lead, sharpening sensory perception. We notice more complexity, such as hints of peach, berries, or floral notes lingering in the finish.

During a quiet, peaceful afternoon, as the body relaxes, structures of flavor slowly unfold—sometimes revealing tea-like or honey-like qualities we normally overlook.

記錄咖啡風味時加入情境與心境的註解

這也提醒我們,在記錄咖啡風味時,不只是寫下酸、甜、苦與香氣特徵,更該加入情境與心境的註解。「心情愉快,音樂輕快,咖啡中的莓果酸甜更突出。」或是「工作壓力大,感覺咖啡偏苦澀。」這樣的風味筆記會更貼近真實經驗,也能幫助自己理解為何同一支豆子,在不同日子喝起來完全不同。
This reminds us that when recording tasting notes, it’s not enough to list acidity, sweetness, bitterness, and aroma. It’s also worth adding context and mood: “Feeling happy, upbeat music playing—berry sweetness stands out more.” Or “Under work stress—coffee feels more bitter and harsh.” Such notes capture the real experience and help us understand why the same beans can taste completely different on different days.

如果把咖啡當作心情的陪伴,那麼不同狀態下也可以選擇不同風味。心情愉快,選擇果香型或花香型(衣索比亞、巴拿馬藝妓)。緊繃焦慮,選擇厚實甜感的(哥倫比亞中焙、巴西日曬),讓身心獲得安定。沉靜悠閒,花香或茶感型咖啡最能呼應,適合慢慢細品。
If we treat coffee as a companion to our emotions, we can choose flavors to suit different states of mind. In a joyful mood, try floral or fruity profiles (Ethiopian, Panama Geisha). Feeling tense or anxious, go for coffees with body and sweetness (medium-roast Colombian, natural Brazil) to bring comfort and stability. In a calm and reflective state, floral or tea-like coffees work beautifully, encouraging slow, mindful sipping.
