It always gives us surprises when we choose coffee. Through flavor introduction, it is often impossible to know whether it is sweet and refreshing, or mellow and low acid. The coffee cuppers establish the sensory quality strength of each coffee bean through cupping evaluation. It will be launched on each product page from now on, making it easier for everyone to choose the delicious cup of coffee that suits you.
六大指標來品測咖啡的感官品質強度
在眾多豆子的世界裡,我們想用系統化&量化的方式來呈現,以六大指標來品測咖啡的感官品質強度,包括:香氣、風味、餘韻、酸質、甜感、醇厚等。每張風味圖的分數是1到10,5分是精品咖啡的低標,目前量化分數最高只有列到10,但如果有更厲害的豆子可能會到11、12分,因為較少遇到目前只列到10分;分數越高、品質越高、越明確。
Among so many coffee beans, we want to present it in a systematic and quantitative way, and measure the sensory quality intensity of coffee with six qualities, including: aroma, flavor, aftertaste, acidity, sweetness, body, etc. The score of each flavor chart is 1 to 10. 5 is the low standard of specialty coffee. Currently, the highest quantitative score is only 10. However, if there are more powerful beans, it may reach 11 or 12, which it is less likely to encounter, so only 10 points are listed. The higher the score, the higher the quality and the more specific.
這六大指標是常用到的項目,依照顯著度或優秀程度給分:
風味 :熟悉甚至可辨識的類食物滋味之顯著程度
餘韻 :品飲咖啡後,味道與香氣於舌後端殘留的時間長短
酸值 :果酸的表現程度,令人舒服且優秀甚至可辨識的酸質可獲得較高的分數
甜感 :品飲咖啡時能感受到甜感的程度
醇厚度:口中感受到的咖啡重量或飽滿程度
These six qualities are commonly used, and they are scored according to the degree of significance or excellence:
Flavor: The degree of notable familiarness or even recognizable food-like flavors
Aftertaste: The length of time the taste and aroma remain on the back of the tongue after drinking coffee
Acid value: the degree of expression of fruit acid, pleasant and excellent or even recognizable acidity can get a higher score
Sweetness: The degree of sweetness you can feel when drinking coffee
Body: The weight or fullness of the coffee felt in the mouth

From the flavor evaluation score, it can be seen that this coffee has a significant flavor and aroma, a relatively refreshing body, and sweet but not cloying. It is suitable for coffee lovers who like a strong aroma and a refreshing taste.
透過風味評測圖,在大家挑選時,對該款咖啡有更親近的感官感受,較容易選到喜歡的豆款。杯測師會陸續努力評測,並逐步於各產品頁上線。此數值供參考,因為依照沖煮參數與個人感受的不同,會造成些許的結果差異。您也可以在品飲時,對照杯測師的數值,了解自己的品評指數與杯測師是不是有一樣的感受喔。
Through the flavor evaluation chart, we have a closer sensory experience of the coffee when choosing coffee, and it is easier to find the favorite one. Cuppers will continue to work hard to evaluate and will gradually add the flavor evaluation chat on each product page. This chart is for reference, as there may be slight differences in results depending on the brewing parameters and personal experience. You can also compare with the cupper to see whether your own evaluation chart and the cupper’s are the same when you drink.
