什麼是濕剝法
濕剝法(Wet-hulled) 是印尼蘇門達臘特有的生豆處理法,又稱半水洗法(Semi-washed) 。當地氣候潮濕,帶殼豆經初步的水洗、發酵處理,經一到兩日曝曬,生豆含水率雖仍有30%~50%,即先剝除種殼再繼續乾燥,以縮短生豆乾燥的作業時程。約再二天的乾燥時間,就能讓咖啡生豆含水率降至儲存目標12~13%。當地人也稱為Giling Basah(濕剝法)
The Wet-Hulled Process is a unique coffee processing method specific to Sumatra, Indonesia. Also known as the Semi-Washed Process, it is adapted to the region’s humid climate. After the coffee cherries undergo initial washing and fermentation, they are sun-dried for one to two days. At this stage, the parchment coffee still retains a moisture content of 30% to 50%. The parchment layer is then removed before continuing the drying process, significantly shortening the drying time. Within approximately two more days of drying, the green coffee beans reach the optimal storage moisture level of 12% to 13%. Locals refer to this method as Giling Basah (Wet-Hulled Process).
