Coffee originates from Ethiopia in Africa. Suitable regions around the world for coffee cultivation are located between 25 degrees north and south latitude, including areas along the equator. Coffee-growing regions must receive an annual rainfall of 1,500-2,000 millimeters and align with the coffee trees' flowering cycles. Additionally, fertile soil, ample sunlight, and appropriate altitude are necessary. The conditions for cultivating high-quality coffee are quite strict, including factors such as sunlight, rainfall, soil, temperature, as well as the methods of harvesting and processing the coffee beans, all of which affect the quality of the coffee.

Coffee Processes
Coffee processing refers to the transformation of ripe red cherries into dried green beans. Each processing method has its advantages and disadvantages, influenced by the natural environment and specific requirements of each origin. Therefore, each coffee-producing region adopts the processing method that best suits its conditions. The processing methods for this batch of coffee are briefly described below:
Washed / Wet Processed
After removing the skin and pulp, the beans are fermented in water tanks to eliminate the pectin mucilage remaining on the inner skin. This is followed by thorough water washing. This method is known for producing rich acidity, which is one of the hallmarks of specialty coffee.
Natural / Sundried / Dry Processed
Also known as the natural drying method or non-washed processing, the harvested coffee cherries are dried under the sun before husking. During the extended sun-drying process, the beans absorb flavors from the skin and pulp, resulting in fuller sweetness and body, and facilitating the development of unique aromas.
Honey / Pulped Natural / Semi-dry Process
This method is intermediate between the natural and washed processes. After removing the skin and pulp, the pectin mucilage is retained, and the beans are dried under the sun. The term "honey" refers to the sticky pectin layer, which feels similar to honey. Retaining a high proportion of sugars and acidity in the pectin layer is crucial for the honey process, producing flavors that lie between those of the natural and washed processes.
