Coffee Flavor 
The flavors of coffee are derived from the breakdown of various nutrients in the green coffee beans during roasting. Heat causes these compounds to degrade into a variety of aromatic molecular structures, resulting in a wide spectrum of flavors. High-quality coffee beans naturally possess a rich aroma that evolves at different temperatures—high, medium, and low—offering a delightful and nuanced experience worth savoring.

Tolima, located in western Colombia, is renowned for its rugged mountains and deep valleys. Despite its remote location, the region boasts abundant water sources and a unique microclimate. The significant temperature variation between day and night creates exceptional conditions for coffee cultivation. The name Finca Las Brisas is inspired by the Río Blanco, a river that flows through the region, bringing cool, refreshing breezes throughout the year—an essential element in shaping the outstanding coffee produced in this land.

The winding mountain trails and unpredictable climate provide an ideal environment for coffee growth. Tolima is flanked by two major mountain ranges, forming fertile volcanic soil and a diverse landscape that contributes to the complexity of its coffee flavors. For generations, the people of Tolima have been deeply connected to coffee, making its cultivation and processing the region’s core industry.

Victor, the owner of Breeze Estate, was born and raised in Tolima, immersed in the coffee industry from a young age. Like many Colombian coffee farmers, he traveled across different provinces, learning and refining his cultivation and processing techniques. When he decided to return home to establish his own estate, he prioritized rigorous harvesting practices to ensure only the finest cherries were selected. Understanding that showcasing Tolima’s unique flavors to the world required expertise in both sensory evaluation and market engagement, he became a certified Q-Grader and served as a judge for the Cup of Excellence (COE) for three years. Through continuous improvement, he has elevated Breeze Estate’s coffee to shine on the international stage.

At Breeze Estate, varieties such as Caturra, Colombia, and Castillo are cultivated with great care. This batch, processed using the washed method, delivers a bright acidity, clean finish, and balanced profile—an elegant and timeless choice for coffee enthusiasts.



The coffee tree, botanically classified under the Rubiaceae family and the Coffea subgenus, is an evergreen tree. Coffee beans are the seeds of the coffee fruit. There are three main varieties: Arabica, Robusta, and Liberica. These three varieties cannot crossbreed to produce different subspecies. 
The world’s specialty coffee comes from the Arabica variety, and within Arabica, there are various subspecies resulting from evolution, hybridization, and mutation.   The world's specialty coffees are derived from Arabica, which itself has various subspecies and hybrids resulting from evolution, crossbreeding, and mutations. These include well-known varieties like Heirloom, Bourbon, Typica, Caturra, Pacas, Catuai, Pacamara, and Geisha. This particular batch uses Caturra, Colombia, and Castillo, briefly described below:

The Colombia variety

A highly disease-resistant variety bred from the cross between Caturra and Timor Hybrid, it can withstand direct sunlight and has a short harvest cycle. Colombia began widespread cultivation of this variety in the 1980s. Typically, Arabica coffee requires shade trees for protection from the sun, but the Colombia variety—being a hybrid with Robusta lineage—does not need shade and can be harvested year-round.
 

Castillo

Castillo is a next-generation, rust-resistant coffee variety developed by the Colombian Coffee Growers Federation (FNC) in collaboration with Colombia’s National Coffee Research Center, Cenicafé. The goal was to enhance the variety for higher yields, greater resistance to diseases, and quality and flavor comparable to Caturra. Today, it is the primary coffee variety cultivated in Colombia.

Castillo inherits Caturra’s compact plant structure and high productivity while also incorporating rust resistance from Timor Hybrid. It is known for its smooth texture, aromatic profile, and bright citric acidity, often characterized by notes of lemon.


(Coffee Processes)
The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. This batch uses the following three processing methods, described below:

Washed Process
Also known as the wet process, this method involves removing the skin and pulp of the coffee cherries before drying. The seeds are then fermented in water tanks to eliminate the remaining mucilage on their surface, followed by thorough washing and drying under sunlight or with mechanical dryers.

The washed process produces a cleaner and crisper flavor profile compared to the natural process. Coffees processed this way typically have lighter body, brighter acidity, and distinct fruit flavors. This method is often associated with specialty coffee due to its clarity and vibrant flavor expression.
