聖圖阿里歐莊園 哥倫比亞 Finca Santuario, Colombia

聖圖阿里歐莊園 (Finca Santuario)一直是栽植工法的佼佼者。莊園主先從土質改善著手,藉由栽種灰葉屬植物提供大地豐富且自然的氮,同時保留原生植物以提供土壤多元化的養分來源;接著分析地形,劃分成266個不同的微型區塊,以利於追蹤管理咖啡的生長情形和微氣候的變化。由於莊園海拔高達1950~2050公尺,日夜溫差大且遍布灰質土壤,特別適合產量低、品質佳的原生系品種,像是波旁種等。

Finca Santuario has always been a pioneer in cultivation methods. The estate owner began by improving the soil quality, enriching the earth naturally by planting leguminous plants to provide abundant nitrogen and preserving native vegetation to diversify nutrient sources in the soil. The topography was analyzed and divided into 266 different micro-blocks to facilitate tracking the coffee's growth and changes in microclimates. With an elevation ranging from 1950 to 2050 meters and a significant day-to-night temperature difference, coupled with the prevalence of clayey soil, the estate is particularly well-suited for low-yield, high-quality heirloom varieties such as Bourbon.

 

並建造水洗處理廠和曝曬乾燥室,乾燥室兩側安裝了大型抽風機,加速空氣流動,除了可以避免生豆過度發酵外、更可以穩定控制曝曬室的温度。藉由多年的努力,已經成為許多國際咖啡比賽選手首選的合作對象,在和這些選手合作的經驗中不斷嘗試和實驗許多新方式來提升咖啡品質。

Additionally, they have constructed a washed facility and sun-drying chambers. Large exhaust fans have been installed on both sides of the drying chambers to accelerate air circulation. This not only prevents over-fermentation of the beans but also helps maintain a stable temperature within the drying chamber. Through years of dedicated effort, Finca Santuario has become the preferred partner for many international coffee competition participants. The experience gained from collaborating with these competitors has led to continuous experimentation with new methods to enhance coffee quality.
