一杯咖啡因有多少 How Much Caffeine in a Cup of Coffee?

 

降低咖啡因攝取量,建議喝阿拉比卡咖啡。阿拉比卡咖啡豆,每克含12毫克咖啡因;羅布斯塔咖啡豆,每克含24毫克咖啡因;1克=1000毫克。我們都知道,咖啡的可溶性物質(咖啡因含在內)占30%,正常適當的沖煮萃取率是20%,也就是三分之二的可溶性物質可以被萃取出來,即三分之二的咖啡因會被萃取出來;因此每1克阿拉比卡咖啡,在正常適當的沖煮下,約有8毫克咖啡因(12x2/3=8)。

To reduce caffeine intake, it is recommended to drink Arabica coffee. Arabica coffee beans contain approximately 12 milligrams of caffeine per gram, while Robusta coffee beans contain around 24 milligrams of caffeine per gram. 1 gram = 1000 milligrams. As we know, soluble substances in coffee (including caffeine) make up about 30% of the coffee bean, and under normal extraction rates (about 20%), two-thirds of the soluble substances, including caffeine, can be extracted. Therefore, for every 1 gram of Arabica coffee, under normal extraction, there would be approximately 8 milligrams of caffeine (12 x 2/3 = 8).

 

衛生機關配合行政院消費者保護處輔導「現煮咖啡」業者以紅黃綠標示區分咖啡因含量:
紅色代表「每杯」咖啡因總含量200毫克以上
黃色代表「每杯」咖啡因總含量100-200毫克
綠色代表「每杯」咖啡因總含量100毫克以下

Health authorities, in cooperation with the Consumer Protection Department of the Executive Yuan, advise "Freshly Brewed Coffee" vendors to label caffeine content as follows:

Red: Caffeine content of 200 milligrams or more per cup

Yellow: Caffeine content of 100-200 milligrams per cup

Green: Caffeine content of 100 milligrams or less per cup


 

如果以20克咖啡沖一杯300cc咖啡,咖啡因有多少

If you brew a 300cc cup of coffee with 20 grams of coffee beans, the caffeine content would be as follows:

羅布斯塔咖啡的咖啡因
如果是羅布斯塔咖啡,此杯咖啡會有約320毫克咖啡因
 -> 衛福部現煮咖啡紅色標示 (201毫克以上)

24毫克咖啡因x20克x2/3=320毫克咖啡因

Robusta Coffee's Caffeine:

For Robusta coffee, this cup of coffee would have approximately 320 milligrams of caffeine.

-> Marked as red by the Ministry of Health and Welfare (above 201 milligrams).

24 milligrams of caffeine x 20 grams x 2/3 = 320 milligrams of caffeine.


如果想要咖啡因少一點
如果要達到綠色 (100毫克以下),可以用12克阿拉比卡咖啡來煮沖180cc咖啡,咖啡因約為96毫克。

To reduce caffeine content:

If you want to achieve the green label (100 milligrams or less), you can use 12 grams of Arabica coffee to brew a 180cc cup of coffee, which would have approximately 96 milligrams of caffeine.

12 milligrams of caffeine x 12 grams x 2/3 = 96 milligrams of caffeine.

 

美國2016年發布的「飲食指南」指出,健康飲食可降低肥胖及預防高血壓等慢性疾病,並首次公布每日咖啡因攝取量,健康的人每天以400毫克為限。也就是說每天可以喝3杯阿拉比卡咖啡,或是沖煮50克阿拉比卡咖啡豆。

The "Dietary Guidelines" released by the United States in 2016 indicated that a healthy diet can reduce obesity and prevent chronic diseases such as hypertension, and for healthy individuals, the daily limit for caffeine intake is 400 milligrams. This means one can drink up to 3 cups of Arabica coffee per day or brew 50 grams of Arabica coffee beans.

 -> 衛福部現煮咖啡黃色標示 (介於100~200毫克)

24毫克咖啡因x10克x2/3=160毫克咖啡因

For Robusta coffee, this cup of coffee will contain approximately 160 milligrams of caffeine.

-> Indicated as "Yellow" by the Ministry of Health and Welfare for freshly brewed coffee (between 100 to 200 milligrams).

24 milligrams of caffeine x 10 grams x 2/3 = 160 milligrams of caffeine.

 

咖啡因含量,在烘焙度上,不會有太大的差異,因為加熱不會讓咖啡因散失。咖啡豆中的咖啡因幾乎不會因烘焙程度而有所改變,咖啡因的熔點(Melting Point)是235°C~238°C,咖啡因的結構不會因烘豆加熱而裂解。咖啡因是水溶性,所以萃取咖啡時間越長,會萃取到越多的咖啡因。此外,烘焙越深,咖啡失重越多,深焙咖啡會比淺焙咖啡在相同重量下比較多顆,在其他萃取沖煮條件相同下,深焙的咖啡因會較多。

Caffeine content does not significantly differ based on roasting, as heating does not cause caffeine to dissipate. The caffeine content in coffee beans remains mostly unchanged during the roasting process. Caffeine's melting point is 235°C to 238°C, and its structure does not break down with roasting. Since caffeine is water-soluble, longer extraction times will result in more caffeine being extracted. Additionally, darker roasts result in more weight loss, so dark-roasted coffee would have more coffee beans per unit weight compared to lighter roasts, resulting in more caffeine content under similar extraction conditions.
