Arabica Pacamara - This legendary variety boasts a unique plant morphology and green bean appearance, with enormous leaves, tall tree stature, and large green beans, earning it the reputation of being El Salvador's most representative variety. It began to shine in 2006, sweeping the top four spots in El Salvador's Cup of Excellence (COE). From 2008 to 2010, Injerto Estate's Pacamara took the championship in Guatemala's COE for three consecutive years, solidifying its position as a leading green bean.

Unlike naturally evolved varieties like Geisha, Bourbon, and Typica, the Pacamara variety is not a product of natural evolution or natural hybridization. Instead, it was developed by a group of talented coffee breeders in El Salvador. In 1958, more than half a century ago, the Genetic Breeding Department of the El Salvador Coffee Research Center (ISIC) first crossed the Pacas variety, a mutation of Bourbon, with the Maragogype variety, a mutation of Typica. This was followed by multiple generations of self-pollination to separate traits and purify genes. Each generation of self-pollination required manual pollination, seedling cultivation, planting, and growing into mature plants, a process that took at least 3-4 years. At the same time, measuring the performance of a large number of variant progeny individuals and selecting potential strains with desirable traits was even more time-consuming and labor-intensive. Then, self-pollination, cultivation, and selection were repeated. After five generations, thirty years had passed, nearly consuming the entire career of a young breeder, before this variety could be developed! In fact, due to only five generations of self-pollination and purification, the new variety still has a small number of heterozygous gene pairs. Therefore, some traits of Pacamara occasionally exhibit characteristics from Pacas or Maragogype. To achieve complete purification, perhaps another five generations would be needed. Good coffee doesn't just happen; it deserves our careful appreciation.
