天職莊園Hacienda Misiones is located in Cundinamarca, just a 2.5-hour drive from Bogotá, Colombia. This century-old estate once spanned 1,300 , hectares producing high-quality commercial coffee. Over time, coffee cultivation decreased as portions of the land were granted to long-serving employees as retirement or welfare benefits, reflecting the family’s deep care and genuine respect for their workers. Several small homes on the estate now belong to these employees, who have built their lives and families there.
Stepping into this once-thriving estate, its vast size requires a car or horse to move around with ease. Today, Hacienda Misiones is undergoing a transformation, combining coffee cultivation, hospitality, and education. In the estate’s old processing mill, now a museum, visitors can see a remarkable retired machine powered not by electricity but by gears, belts, and human effort.
In recent years, under the guidance of manager Luis, the estate has embraced specialty coffee, sourcing diverse varietal seeds from other regions and employing professional staff to maintain strict field and cupping standards. This dedication has revitalized the estate, allowing its rich heritage and the fruits of their labor to be shared with the world.

Arabica Variety – 蘇丹汝魅Sudan Rume
Discovered around 1940 on the Boma Plateau in southern Sudan, near Ethiopia, Sudan Rume is a rare indigenous variety often regarded as a prized resource for coffee exploration. The trees are tall with elongated beans and show strong disease resistance, though yields are low. Rarely grown at large scale, Sudan Rume appears mostly in micro-lot productions, prized for its highly complex and distinctive flavor, making it a favorite among specialty coffee enthusiasts.
Major Coffee Varieties
The coffee tree, botanically classified under the Rubiaceae family and the Coffea subgenus, is an evergreen tree. Coffee beans are the seeds of the coffee fruit. There are three main varieties: Arabica, Robusta, and Liberica. These three varieties cannot crossbreed to produce different subspecies. The world’s specialty coffee comes from the Arabica variety, and within Arabica, there are various subspecies resulting from evolution, hybridization, and mutation.
(Coffee Processes)
The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. This batch uses the following three processing methods, described below:
【Washed Process】
Also known as the wet process, this method involves removing the skin and pulp of the coffee cherries before drying. The seeds are then fermented in water tanks to eliminate the remaining mucilage on their surface, followed by thorough washing and drying under sunlight or with mechanical dryers.
The washed process produces a cleaner and crisper flavor profile compared to the natural process. Coffees processed this way typically have lighter body, brighter acidity, and distinct fruit flavors. This method is often associated with specialty coffee due to its clarity and vibrant flavor expression.
